haven't they done heavy ion collisions before?

In 2010, 2011 and 2012 (actually 2013 as the shutdown got shifted), sure. Now they have heavy ion collisions at a higher energy.
More than 1 PeV in the collision. That is sufficient energy to lift a pen by about 1 mm. A macroscopic amount of energy packed into a tiny nuclear fireball.

I would also add that in p-p and pb-pb collisions they are looking for rare processes. these events take a lot of data to show up. In order to get the amount of data they need they will have to run the LHC for years. So just because the have done Pb-Pb collisions before doesn't mean there isnt more stuff to find.
